Wholesome Sugar Free Banana Chocolate Chip Muffins by Tanya Fraser, RHN
Ingredients
- 2 cups Whole Wheat Flour
- 1/2 cup Ground Flax seed
- 1 tablespoon Aluminum Free Baking Powder
- 1 teaspoon Aluminum Free Baking Soda
- 1-2 teaspoon Ground Cinnamon
- 1/3 cup Extra Virgin Coconut Oil (Extra Virgin Olive Oil also works)
- 1 teaspoon Real Vanilla Extract
- 1 cup Almond, Rice or Hemp Milk
- 1/4 cup Unsweetened Organic Apple Butter (Unsweetened Organic Apple Sauce can also be used)
- 1/4 cup Organic Plain Yogurt
- 1 Egg
- 1/4 cup Dark Chocolate Chips (Cacoa Nibs can also be used)
- 4-5 Frozen Bananas
Directions

| Sift all dry ingredients together in a bowl | |

| In another bowl combine all wet ingredient and mix well | |

| Fold in the wet mixture into the flour mixture. It should become quite thick. | |

| Fold in the bananas. Once the bananas are mixed fold in the chocolate chips | |

| Heat the oven to 375F, and bake muffins in a muffin tray for about 20-30min. At 20 min place a toothpick in a muffin, if the toothpick comes out clean, the muffin is done. Once cooked take them out and cover with a cloth this prevents the muffins from deflating. | |
